The Pear look

Pear Brandy (such as Poir Williams) 30ml
Momo Hime Peach Umeshu 30ml
Pear Juice 30ml
Yuzu Juice 10ml
Fig Bitters

Garnish: Koume drop

All ingredients into shaker, shake and pour into cocktail glass.

Negroni from the Cask by Yumi Nemoto (premium umeshu cocktail)

Laphroaig 45ml
Cask Strength Umeshu 20ml
Campari 30ml
Garnish dry orange slice

Strawberry Shisho Mohito by Yumi Nemoto (premium umeshu cocktail)

Strawberry Shiso Mojito

Shiso infused Vodka 45ml
Umeshu Shiro 30ml
Lime Juice 10ml
Wasanbon Sugar 1 tsp( dessert spoon)
Fresh Strawberry suitable 
Garnish: Shiso and Dry Strawberry 

Muddle strawberry and all ingredients into shaker, shake and serve in shochu cup.

Nikka Coffey Gin 45ml
Ume Coulis 30ml
White Grapefruit Juice 30ml
Calpico 10ml
Sansho Pepper Sprinkle 
Garnish: Shinsho peopper on top

All ingredients incl. sansho pepper into blender then freeze.

Prosecco up

Serve with macarons

Grapefruit Juice 15ml
Absinthe 1btsp
Sparkling Sake up(90ml)

All ingredients except sparkling sake into shaker, shake and pour into champagne glass and up sparkling sake.
